Once cherries are sorted floated they undergo an 'Extended Ferment' for 2 days (EF2). This involves resting the cherries in anaerobic environment for 2 days in a cool room prior to moving to raised beds. This extended ferment shows in the cup with jammy fruit qualities and a improved silky texture. This micro-lot is 100% Java. This variety originated in Ethiopia and is a natural mutation of Typica.
