These coffees are sourced from regions where natural processing is either a long-standing tradition or a practical choice due to limited access to water and/or processing infrastructure. The natural, or ‘dry’, process involves drying the coffee as whole cherries, resulting in a bold, fruity, and often fermented flavour profile. It’s also the least resource-intensive method. Compared to the washed process, natural processing can use up to 20 times less water, making it a more sustainable choice and significantly reducing the risk of water pollution on the farm.
