A clean and sweet cup with juicy stone fruit acidity, elevated by a subtle warmed spice finish. This lot of Bourbon, Villa Sarchi and Caturra was brought to us through Marta Dalton at Coffee Bird. Quite astonishingly, Marta is the great great great granddaughter of Finca Filadelfia’s founder, Manuel Matheu. Like most farms in Guatemala, they originally harvested cochineal, a scale insect from which the natural dye carmine is derived. During the industrial revolution, Germany developed synthetic dyes, removing the need for the natural carmine colour. This forced Manuel to transition away from cochineal to coffee in 1864. Six generations later, the farm is still owned and ran by the same family.
