This mix of Colombia and Castillo offers pleasing depth; its pronounced citrus sweetness wonderfully balances with a clean winey acidity. Cauca’s violent past, with a heavy presence of FARC guerrillas, had historically prevented the FNC (Colombia’s national coffee board) and specialty-focused exporters from establishing a presence in the region. As violence has diminished, it has granted the growers increased access to international markets, finally allowing this region’s wonderful coffee-growing potential to be showcased.
