At 1,850 meters, he and his family cultivate Kurume and other local varieties, using careful washed processing that brings out exceptional clarity and flavor. As part of the Jabanto farmers' group, Sharbo's coffees consistently stand out as some of the finest in Ethiopia. FERMENTATIONThe wet process uses water to remove the coffee cherry's skin and pulp, followed by fermentation to break down the mucilage. During fermentation, natural enzymes convert sugars into acids, gases, and alcohol, which influences the coffee's flavor. The beans are then rinsed, dried, and milled, preparing them for roasting.
