Grind Adjustment

if sour: grind finer — reduce 2–3 clicks (try ~27–28) and/or raise brew temp 1–2°C; if bitter: grind coarser — increase 2–3 clicks (try ~32–33) and/or lower brew temp 1–2°C

Brewing Steps
  1. 1. Bloom with 30g water for 30 seconds — start timer, pour evenly to saturate all grounds.
  2. 2. Pour steadily to 225g by 1:00 (about 45–60s after bloom). Give one gentle stir at ~1:05 to break pockets of gas and ensure even extraction.
  3. 3. Place lid and let steep undisturbed until 2:00. At ~2:00, flip the Hario Switch to drain slowly into your server — allow drawdown to finish by ~2:30.
  4. 4. Total time ~2:30. Serve immediately. If adding milk, this slightly bolder extraction will cut through and retain cocoa/molasse notes.
