The Pacamara Natural from Finca Majahual is one of the farm’s most distinctive offerings. Grown at high elevation in the Los Naranjos Valley, these large-bean Pacamara cherries are selectively harvested at peak ripeness and naturally processed entirely on-site. By keeping processing at elevation, without transporting cherries to distant mills, the farm preserves the integrity of the fruit, resulting in cleaner, juicier, and brighter cups. After careful hand-selection, the cherries are spread on raised African-style drying beds where they are turned regularly to ensure even drying. This process takes approximately 26 days, depending on weather conditions, followed by a period of stabilization in the farm’s greenhouse to lock in consistency.
