Brewing Steps
  1. 1. Bloom with 30g water for 30 seconds (start timer at first pour).
  2. 2. Pour to 120g by 0:45 — steady, even pour; give a gentle swirl or quick stir to ensure full saturation.
  3. 3. Pour to 240g by 1:15, close the Switch (keep it off/drain closed) and let steep until 2:15; at 2:15 open the Switch and allow the brew to drain (finish draining by ~2:45).
  4. 4. Total time ~2:45–3:00 from first pour to finished cup. Serve immediately.
