Hario Switch

Temperature
93°C (199°F)
Ratio
1:15 (15g coffee : 225g water)
Grind
1Zpresso J ~30 clicks (medium‑fine; about the 30-click range for a balanced extraction)
Grind Adjustment

if sour: go finer by 1–3 clicks, or raise temp 2–3°C and/or increase steep time slightly; if bitter: go coarser by 1–3 clicks, or lower temp 2–3°C and shorten steep time

Brewing Steps
  1. 1. Bloom with 30g water for 30 seconds (fully saturate grounds, give a gentle swirl or stir at 15–20s).
  2. 2. Pour remaining water to 225g total by 1:20 (steady pour in thin pulses to reach 225g by ~1:20), gently stir once to equalize.
  3. 3. Set the Hario Switch to steep (closed), let the coffee sit for a total immersion time until 3:00. At 3:00 flip the Switch to drain and let drawdown finish (aim to complete by ~3:30–3:45).
  4. 4. Total time and serving: total brew ~3:30–3:45. Remove filter, decant and serve immediately while fresh.
Pro Tips
  • 💡 Use the Switch's immersion functionality: keep it closed for the full steep to build sweetness and highlight anaerobic fruit notes, then open quickly to avoid over-extraction.
  • 💡 Key factor: consistency of grind and timing — small +/- changes in clicks or ±10–20s steep will noticeably change brightness; for this anaerobic Sumatra aim for clarity with slightly warmer water and medium-fine grind.
Troubleshooting

Sour → grind finer by 1–3 clicks, raise temp 2–3°C, or increase steep by 15–30s. Bitter → grind coarser by 1–3 clicks, lower temp 2–3°C, shorten steep or finish drawdown earlier.
