Brewing Steps
  1. 1. Bloom with 30g water for 30 seconds
  2. 2. Pour to 150g by 1:00 (steady concentric pours; gentle stir once after pour)
  3. 3. Top to 225g by 1:30, close the switch and let steep; at 2:00 open the switch to allow drawdown and let drain (aim to finish by 2:30–2:45)
  4. 4. Total time ~2:30–2:45. Remove filter, give a gentle swirl, decant and serve immediately

Troubleshooting

Sour → make grind finer by 2–3 clicks, increase steep time slightly or raise temperature to 93–94°C, or use a slightly lower ratio (e.g., 1:14). Bitter → make grind coarser by 2–3 clicks, reduce temperature to 90–91°C, shorten closed steep time or open the switch earlier, and avoid over-agitation.
