This Bourbon Rosado from Servio Tulio Botina Quinayas and his team at Finca El Cedro is one of the most dynamic Pink Bourbon lots we've encountered over the years. The aromatics of the coffee are big with a berry-medley-mash. In the cup, there is a plethora of dark purple and red fruits with notes of pluot, strawberry, currant nips of cranberry. As it cools the structure goes from round and glossy to feeling firm with a citric acidity. Overall the sweetness is pleasurable and the acidity captivating. Servio's work has stood out to us, veering from the popular pulpy profile of the region, this coffee is vibrant adn . It's clean, complex and simply enjoyable to drink.
