This lot from José Salazar, one of our favourite producers, is 100% Bourbon Ají grown on the mountainsides of Bruselas, Pitalito. Through our partners Caravela, José has built a reputation for cultivating outstanding Bourbon varietals, and we’ve proudly selected his coffees since 2018. Now in our sixth year of working together, his Pink Bourbon and Bourbon Ají remain highlights of our Producer Series. Named after the chili-like aroma of its ripe cherries, this Bourbon Ají is an exotic, aromatic cup with notes of papaya, panela, and lingering bergamot florals — a true showcase of Colombian excellence.
