Linarco Rodríguez is both a coffee producer and a community leader, standing at the head Finca Betania, his farm, and Cafe Origen Palestina (COP), a cooperative connecting 117 producers in Southern Huila who commit themselves to sustainable and traditional farming methods. As a coffee producer, it is through his own means and needs that he created the cooperative in 2016. His farm lies in Palestina, a subregion of Huila, at a height of 1700 masl and is a benchmark of the COP. For example, on his own premises he has upgraded the drying facilities to maintain post-harvest quality and as a community investment he has created a cupping lab and training program for him and other farmers in the network. His Pink Bourbon perfectly demonstrates the high standards the community aims for in specialty coffee. It was handpicked when fully ripe, then depulped and fermented anaerobically for 32 hours.
