After selection, the cherries undergo a 30-hour underwater fermentation, are gently washed, and then dried in temperature-controlled conditions for optimal clarity and balance. The variety itself has an intriguing story. It was first discovered in Inzá when farmers noticed a coffee tree that looked and behaved very differently from the usual cultivars. With higher yield and greater resilience, it quickly gained local attention. Genetic testing by a laboratory in London later revealed that the variety shares close structural and genetic similarities to Bourbon Aruzi from Ethiopia.
