These producers farm tiny plots not only of coffee but also food and other cash crops, making coffee both a livelihood and a way of life. Their careful attention to cultivation and picking ensures high-quality cherries that form the backbone of Danche’s reputation. About This Lot Hydro Honey is a unique and innovative processing style that enhances both clarity and fruit depth in the cup. The cherries are hand-selected for ripeness at above 20 Brix, then sorted mechanically and floated to remove any underripes. After 48 hours of shaded pre-drying, the cherries are placed into tanks quenched with water for a two-stage fermentation: 48 hours anaerobic followed by 48 hours aerobic.
