Grown by Faiver Fernández and his family in the hills of Paicol, it showcases the unique potential of Pink Bourbon when cultivated and processed with precision. Cherries were handpicked at peak ripeness, floated to remove defects, and then pulped. Fermentation took place in airtight stainless steel tanks for 26 hours before the coffee was washed and dried slowly over 12 days in the sun. The result is a coffee with a silky body, balanced structure and a sweet, lingering aftertaste. Each cup of El Encanto celebrates the Fernández family's commitment to detail and sustainability. This is Pink Bourbon at its best – expressive, delicate and incredibly moreish.
