Though the mill was established in 2011, Steven Vargas and his father have dedicated their lives to coffee, meticulously cultivating and processing a range of exceptional varieties. They manage several farms, but Finca El Llamarón stands out as a dedicated SL28 plot, growing at 1500 masl in the Fraijanes region. With deep family roots spanning five generations, their approach is both traditional and progressive, ensuring precision and care in every step. A Thoughtfully Crafted Natural Process At Don Sabino Micromill, processing coffee is an art. Cherries are hand-harvested at peak ripeness and carefully sorted using floatation tanks to remove defects.
