But it’s not just where this coffee comes from that makes it remarkable—it’s how it’s processed. Only ripe red cherries measuring 20–22° Brix are hand-selected before being placed into sealed tanks flushed with CO₂, creating a fully anaerobic environment. This carbonic maceration allows for a slower, more controlled fermentation. The absence of oxygen and the presence of CO₂ regulate yeast activity and temperature, enhancing the coffee’s floral and citrus-driven character. Once fermentation is complete, the coffee is washed clean and then dried for 15–20 days on raised beds. But the journey doesn’t end there.
