Here, altitude, climate, and terroir converge to create conditions ideal for cultivating landrace varieties known for their aromatic complexity and clarity. What makes this release so special is its natural anaerobic wine processing—an innovative fermentation method introduced to the region in 2020. Once the ripest cherries are meticulously hand-sorted, they are sealed in stainless-steel tanks that allow carbon dioxide to build and displace oxygen, creating a pressurised, oxygen-free environment.
