Tabi is a unique cross developed by Federación Nacional de Cafeteros, combining Timor Hybrid, Typica, and Bourbon to produce a variety that is both disease-resistant and incredibly expressive in the cup. Cherries for this lot were selectively hand-picked at peak ripeness and then hand-sorted to remove defects. After harvest, the coffee was sundried on raised beds under temperature-controlled conditions, allowing the sweetness and complexity to build slowly and naturally. The result? A filter coffee with depth, character, and elegance—expressing both the strength of the Tabi variety and the refined touch of one of Colombia’s most respected producers.
