Everything begins with obsessive cherry selection: only ripe fruit measuring 24–26° Brix makes it through. Floaters are removed, cherries are disinfected with alcohol, and then the magic begins. The first step is a thermal shock with 55°C water to activate sugars and set the stage for deep flavour development. Next, the coffee undergoes a 60-hour anaerobic fermentation in sealed tanks.
