The Ombligon variety is a rare selection derived from Ethiopian heirloom seeds. Over several years, Luis carefully studied its growth behaviour and unique morphology. The cherry is elongated and features a small protrusion at the base, resembling a belly button – which inspired the name Ombligon, from the Spanish word for navel. Cherries are harvested at peak ripeness and go through a 30-hour underwater fermentation, followed by pulping and gentle washing.
