A true example of meticulous care and dedication, this coffee is harvested with strict ripeness criteria to ensure only the best cherries make it into the final product. Every cherry is floated and hand-sorted to remove any defects, ensuring that only the finest beans are selected. After harvesting, the cherries undergo a fascinating 30-hour underwater fermentation process, which enhances the flavour profile and clarity. Once pulped, the parchment is carefully washed and dried under controlled conditions to ensure the ideal moisture content is achieved.
