His approach to coffee processing continues to amaze us, and with each release, we’re blown away by the clarity, complexity, and expressive flavours of his coffees. At his state-of-the-art production facility in Aceh, North Sumatra, Natcha experiments with advanced fermentation techniques, including Carbonic Maceration and wine yeast fermentation, methods inspired by the wine industry that elevate the depth and structure of his coffees.
