This particular lot is crafted through a carefully controlled carbonic maceration process—a rare approach in Kenya that focuses on flavour development through precision fermentation. After harvesting, only the ripest red cherries (20–22° Brix) are sorted by hand before being placed whole in sealed tanks filled with CO₂, forcing oxygen out. Yeast, temperature and humidity are carefully controlled to guide an eight-day fermentation at ambient temperatures. This draws out beautifully intense citrus-blossom aromatics and caramel sweetness.
