Marcato

by Prima Roastery

Wild, full-bodied and full-flavoured, Marcato is one of our favourite blends. It has been designed for pulling ultimate espresso shots but is a versatile blend that will work well with your plunger too. With overtures of blueberry and Doris plum, this complex blend has depth, a rich aroma and distinct sweet notes. Your taste buds will thank you for this choice.

Hario Switch

Temperature
93°C (199°F)
Ratio
1:15 (15g : 225g)
Grind
≈30 clicks (1Zpresso J) — medium‑fine (table‑salt to slightly finer)
Grind Adjustment

if sour: grind 2–4 clicks finer, raise temp 1–2°C or increase immersion 15–30s; if bitter: grind 2–4 clicks coarser, lower temp 1–2°C or shorten immersion 15–30s

Brewing Steps
  1. 1. Bloom with 40g water (93°C) for 30 seconds — gently stir once to ensure all grounds are wet.
  2. 2. At 0:30, pour slowly to 225g total by 0:45 (steady spiral pour). Stir 1–2 times, then close the Hario Switch to begin immersion.
  3. 3. Steep closed until 2:15 total from start (so ~1:30 immersion after pour). At 2:15 open the switch and allow drawdown (~15–45s).
  4. 4. Total time ~2:30–3:00 including drawdown. Serve immediately and enjoy.
Pro Tips
  • 💡 Use the Switch to its strength: fully immerse for development, then open for a clean, bright finish — this highlights the Marcato's berry and sweet notes.
  • 💡 Consistent grind and even saturation are key — aim for even pouring and a single gentle stir during bloom to avoid channeling and bring out the coffee's complexity.
Troubleshooting

Sour → grind 2–4 clicks finer, increase brew temperature by 1–2°C or extend immersion 15–30s; Bitter → grind 2–4 clicks coarser, reduce temperature 1–2°C or shorten immersion/pressure during drawdown.
