Prodigal menu champion — Jorge Rojas — brings us this gorgeous, white-honey geisha. The white-honey process leaves very little fruit in contact with the parchment layer, lending just the right amount of coffee-cherry goodness to ripen up the fruit flavors. We tasted a beautiful combo of tropical pineapple, peach, and floral vanilla. The lingering berries in the finish make this a stunner. This coffee went to our Monthly Subscribers first! Jorge grew this geisha at his farm, Finca La Roca, a 7-hectare certified organic farm. This coffee was floated to remove defects, then fermented for 48 hours. Depulping left a tiny amount of fruit in contact with the seed — the white honey process. It then dried for 14 days and then we rushed it to Prodigal to preserve quality.
