The Caballero family are legendary in Honduras – for generations they’ve been producing exceptional coffee around the town of Marcala, La Paz, in western Honduras, close to the border with El Salvador. It’s arguably an understatement to say, Fabio Caballero Jr, has coffee in his blood. He is the 5th generation of the Caballero family to produce coffee and based on what we’ve tasted so far – he's got a long, and successful career ahead of him. After graduating from university, Fabio began managing some of his family’s farms and in 2019, founded Finca La Salvaje with his grandfather, the legendary Don Fabio Caballero (2018 Honduras COE winner). La Salvaje is planted with Geisha and Java, using seeds from the family's COE winning farm, Finca San Francisco. The name, La Salvaje (meaning Wild, in Spanish) is a nod to the environment in which the coffee was grown – it's an untamed place, filled with birds, native wildlife, and plenty of shade.
