Bourbon Aruzi is a rare variety discovered in Inza, Cauca, when a coffee tree with unusual characteristics was found growing among more common cultivars. Later analysis showed strong similarities to Ethiopia’s Bourbon Aruzi, though research is still ongoing into its exact genetic makeup. Javier’s lot was selectively harvested for peak ripeness, then floated and hand-sorted to remove defects. The cherries underwent 30 hours of underwater fermentation before pulping, followed by gentle washing and careful drying in a temperature-controlled environment to achieve optimal moisture content.
