For three years running, this coffee has been an absolute dream to roast and drink, cementing its place as one of our favourite releases. This lot comes straight from Pitalito, Huila, where Willyan and his wife, Maria Esther Lopez, produce exceptional coffees on their farm, La Montañita. Their focus is primarily on Pink Bourbon, a variety native to Colombia, specifically Huila. It was originally named for the cherry’s distinctive pink hue and its resemblance to Bourbon trees. As its popularity grew, so did the name, however, recent scientific research reveals that Pink Bourbon shares more genetic traits with Ethiopian landrace, making it a unique variety all it
