Brewing Steps
  1. 1. Bloom with 40g water for 30 seconds
  2. 2. Pour to 120g by 0:45 (gentle concentric pours), stir once to ensure even saturation
  3. 3. Pour to 225g by 1:10, give one gentle stir, seal the Switch and let steep
  4. 4. At 2:10 open the Switch to drain; allow draining to finish (~20–30s)
  5. 5. Total time ~2:40–2:50. Decant and serve immediately
