This is our fifth year purchasing coffees from Javier Solis — and our third offering his variety separations. We are as excited as ever to highlight the impressive range of varieties and processing methods on his fertile, high-elevation farm in El Cedral, Tarrazu. This balanced, sweetness-forward Catuai Honey lot features the same variety and processing as the original lot we bought back in 2021. Cherry is picked, pulped, and placed mucilage-intact on patio for 72-96 hours, after which the parchment is dried in thin layers on raised beds with frequent agitation until it reaches ideal moisture content. In the cup expect rounded red fruit with a dense, nutty underlying sweetness.
