For years Dandy had been experimenting with this technique, where whole cherries are placed in tanks to be covered filled with Carbon Dioxide. This enables a longer fermentation period, creating complex flavours aromatics. This lot oozes a sweetness reminding us of ripe Pink Guava, Jackfruit before easing into a sticky finish like Mangosteen.
