This lot comes from one of their newer farms called Las Amazonas, situated 1600 MASL around their wet mill in Marcala, Honduras. Most coffees from Central America are fully washed, which involves depulping dry fermenting the coffees for 12-18 hours. The Caballeros employ “guardiolas” or mechanical dryers for larger lots, after pre-drying them on raised beds, which increases their efficien
