To reach his isolated coffee plots, it is necessary to hike two hours through lush terrain. For more than two decades, he has cultivated some of Mexico’s most traditional varieties. Edelmira began working with the Diaz family in 2021, initially focusing on exploring the quality potential of their Maragogipe variety. After two years of significant improvements—sourcing cherries and processing natural batches in Edelmira’s wet mill—2024 marked a turning point. With Edelmira’s support, Don Ezequiel transitioned to washed processing directly on his farm, resulting in a clean, fruity batch of coffee that showcases the often-overlooked quality potential of the Maragogipe variety.
