Hario Switch

Temperature
92°C (198°F)
Ratio
1:16 (15g : 240g water)
Grind
1Zpresso J ~30 clicks (medium-fine, texture like caster sugar)
Grind Adjustment

if sour: grind 2–3 clicks finer; if bitter: grind 2–3 clicks coarser

Brewing Steps
  1. 1. Bloom with 40g water for 30 seconds — pour evenly to wet all grounds.
  2. 2. At 0:30, pour steadily in a spiral to 140g by 1:30 (add 100g). Give one gentle stir to ensure full saturation.
  3. 3. Pour the final 100g to 240g by 2:15 (finish with a thin spiral), stop pouring and let the slurry settle.
  4. 4. At 2:30 flip the Hario Switch to drain; total brew time ~3:00–3:30. Serve immediately.
Pro Tips
  • 💡 Use the Switch as an immersion brewer: keep the coffee submerged during the full steep for clarity, then flip to drain for a clean finish — this highlights Gesha's florality.
  • 💡 Key factor: consistent, even pours and correct grind. Too coarse loses floral sweetness; too fine brings harshness. Use fresh filtered water at 92°C and pour smoothly.
Troubleshooting

Sour → grind 2–3 clicks finer, increase brew temperature 1–2°C, or extend contact time slightly before switching. Bitter → grind 2–3 clicks coarser, reduce water temperature 1–2°C, shorten total contact time or pour more gently to avoid over-extraction.
