This Catuai produced by the Fabiana Family is processed naturally drying the cherries on African raised beds. For the first 3 days the cherries are dried in the shade to legthen the drying process and generate a little fermentation. This fermentation gives the coffee its intense natural flavour, rich sweetness and syrupy body.
