Coffea Circulor Ethiopia Sayisa NAX This coffee comes from the sub-region Buku Sayisa, which means “Blessed Valley”. This altitude typically produces high density beans and relatively smaller screen size, which contributes a lot of this unique flavorful cup. Due to its altitude, harvest usually occurs later than other normal coffee growing altitude regions. The farmers delivering cherry here deliver on horseback due to the uneven terrain around the site. The cherries are handpicked and only fully ripe cherries are selected for further processing. The cherries are then tightly packed inside a big sealed plastic container and left fermenting anaerobically (without oxygen) for 18 to 24 hours. During this process microbes consume all the oxygen in the container meaning that microbes that typically breathe oxygen have a harder time surviving and those that flourish on carbon dioxide (the typical byproduct of oxygen-breathing microbes) are able to dominate fermentation.
