José Herman Salazar lives and produces coffee just out of Pitalito, Southern Huila - the highest-producing region in Colombia. The Salazar family farm produces three varieties: Pink Bourbon, Castillo, and Bourbon Ají.This particular lot from the Salazar family is Bourbon Aji (“ají” means “chilli” in Spanish), named after the coffee cherries that have an aroma reminiscent of hot chilli peppers. While genetic testing indicates that this variety is not a bourbon at all, but rather, a little-known Ethiopian landrace variety, it hasn't stopped José from taking out positions in the Cup Of Excellence competition. We're always excited to release José's coffee, and this one is no exception. In the cup, you'll find blackcurrant and cola.
