Bookkisa - Natural Ethiopia

We have been buying Ture Waji’s naturally processed coffee from Bookkisa and the Sawana Washing Station for several years now, and we are so glad to have it back in time for peak summer. Bookkisa is composed of deliveries from approximately 30 smallholder garden farmers — entirely organic — growing in fully and semi-forested systems. Processing here is simple but immaculate: ripe cherry hand-picked and dried for 16-20 days on raised beds. And while the fruit quality of naturally processed coffees can sometimes veer into overripe territory, this coffee is a fruit bomb that stays crisp and structured. Expect juicy berry and melon, brisk citrus, and a sweet syrupy layer of red fruit with tropical accents.
