Costa Rica Corazon De Jesus Natural Filter - Single Origin. This lot is grown on El Salitre farm, owned by Johnny Alvarado his family. It is a naturally processed lot that comes from their family micro-mill named Corazon De Jesus. This is a family affair, incorporating Seven coffee producing members across the Brunca region. Harvesting the ripest cherries to start, polypropelene bags are used for a 2 day in-cherry pre-fermentation stage under shade. On the third day the cherries are laid out on patios and piled and covered at night, repeated over ten days. The cherries are moved to African beds for a final 15 days until optimum moisture is reached. Johnny and his family have won multiple awards at the Costa Rican Cup of Excellence competitions over the years, including this year’s top honours in both the washed and honey/natural categories.
