Uniquely, it is located in a traditional tea-growing region. The area produces coffee twice a year, with harvests from March to May and again from October to December. FERMENTATIONThe wet process uses water to remove the coffee cherry's skin and pulp, followed by fermentation to break down the mucilage. During fermentation, natural enzymes convert sugars into acids, gases, and alcohol, which influences the coffee's flavor. The beans are then rinsed, dried, and milled, preparing them for roasting.
